08 - 2 slices whole-grain bread, toasted
09 - Extra chives or chili flakes for garnish (optional)

# Directions:

01 - Place eggs in a small saucepan, cover with cold water, and bring to a boil. Reduce heat and simmer for 10 minutes to achieve hard-boiled eggs.
02 - Drain the hot water and cool eggs under cold running water. Peel and roughly chop the eggs.
03 - Scoop out the ripe avocado into a medium bowl and mash with a fork until smooth but slightly textured.
04 - Add chopped eggs, lemon juice, chives, parsley, salt, and pepper to the mashed avocado. Gently mash together leaving some texture.
05 - Toast whole-grain bread slices to your preference.
06 - Spread the avocado egg mixture evenly over the toasted bread slices.
07 - Top with extra chives or chili flakes if desired. Serve immediately.

# Expert Tips:

01 -
  • It's ready in under 25 minutes but tastes like you spent real time thinking about breakfast.
  • The creaminess of avocado meets the satisfying bite of eggs in a way that keeps you full through the morning.
  • You can make it the same way twice or change the herbs and toppings completely depending on what's in your kitchen.
02 -
  • The lemon juice is not optional—it's what prevents the avocado from turning brown and tastes like you knew what you were doing the whole time.
  • If your avocado is hard, it will never mash into something creamy, no matter how hard you try; if it's too soft, the whole thing becomes a mushy disappointment, so pick one that's just slightly yielding.
03 -
  • If you can only find hard avocados, put them in a paper bag with a banana overnight—the ethylene gas will ripen them quietly while you sleep.
  • A wooden fork or the back of a spoon mashes avocado more gently than metal and prevents that bruised, oxidized look that happens when you're too aggressive.
