# Expert Tips:

01 -
  • The honey and soy glaze turns into a sticky, caramelized coating that clings to every crispy leaf.
  • Even people who swear they hate Brussels sprouts end up reaching for seconds.
  • It comes together in about half an hour with ingredients you probably already have.
  • The contrast between the crispy edges and tender centers is completely addictive.
02 -
  • Don't crowd the baking sheet or the sprouts will steam instead of crisp, use two sheets if you need to.
  • The broiler step is quick and unforgiving, stay close and check every 30 seconds or you'll end up with charcoal.
  • If your sprouts are on the larger side, quarter them instead of halving so they cook evenly.
  • Toss them in the glaze while they're still hot so it clings and caramelizes better.
03 -
  • Use the darkest baking sheet you have, dark pans absorb more heat and help the sprouts caramelize faster.
  • If the glaze seems too thick, add a teaspoon of water to loosen it before tossing with the hot sprouts.
  • Toast your sesame seeds in a dry pan for a minute before sprinkling them on, it makes their flavor twice as nutty.
  • Save any loose leaves that fall off during prep and roast them separately, they turn into addictive crispy snacks.
